It's Amanda - Party on a Budget's cake maker. Today I'm going to share my absolute favorite cake recipe for a dark chocolate mud cake. This is a beautiful, rich, dense cake with really strong flavour. Its the perfect choice for a large crowd because a little bit goes a long way! This is a very wet mix so don't panic after you've added the flour that its too runny, and being a mud cake it will rise a little, but you won't get a huge dome on top that you get from some other more airy cakes.
-250g dark chocolate
-250g butter or margarine
-1 tablespoon instant coffee powder (This just adds a richness to the flavour, you cannot taste coffee at all in the cake, and this is coming from a coffee hater!)
-1 cup water
-1 cup firmly packed brown sugar
-2 eggs, lightly beaten
-1 1/2 cup plain flour
-1/4 cup cocoa powder
-3/4 teaspoon bicarbonate of soda
STEP 1: Preheat oven to 150°C and grease a 20cm round cake tin.
STEP 2: Combine butter, chocolate, instant coffee and water into a bowl and melt together, either in a microwave or over a small saucepan. Make sure you do this very gradually in the microwave because burnt chocolate stinks the house out! Once melted, add brown sugar and stir until dissolved.
STEP 3: Allow mix to cool for aproximatley 30 minutes, then add eggs. Stir unti combined.
STEP 4: Sift flours, cocoa powder and bicarbonate of soda together. Add to the melted chocolate mix using a large wooden spoon and stir until smooth. Pour into cake tin and bake for 90 minutes. Check to make sure its cooked with a skewer and allow to cool before removing it from the tin.
And thats it! A simple and easy recipe for a delicous cake that will have all your guest singing your praises!
